No, I’m not talking about canned artichoke hearts, but the fresh, spiky thistles you can find in a supermarket or farmers market. I must admit, they really aren’t very attractive and I was doubtful at first myself but when you try them I’m sure you will just love them. There are many ways to cook an artichoke but this is one that you cook in the microwave so its very quick. Oh, and keep trying different dips. So many different kinds, there’s even a few made with avocado! serves 2
INGREDIENTS: 2 artichokes
FOR DIP: Tbsp. butter 1/4 of a lemon
1 clove garlic, minced
Wash artichokes and gently scrub with a kitchen or potato brush. Cut a bit of the tip of the artichoke and then cut of the stem. Then trim the tip of the top of each point to get rid of the little sharp part. Put about an inch of water on the bottom of a microwavable bowl or dish and put the artichokes stem down in the dish. Cover and microwave for 7 to 8 minutes. Let it sit a minute with the lid on and then try to pull of one of the leaves of. If it comes of easily then its ready and if not microwave for another minute and test again. To make the dip, squeeze lemon into a microwavable bowl and stir in the butter and garlic and microwave until the butter is melted. To eat, pull of a leaf and dip the side facing the center of the artichoke in the dip and use your teeth pull out the meat. It will get more tender as you get further in. When you finish the leaves try eating the middle. Some really like it. ENJOY!
