Delicous and Healthy Apple Raisin Cinnamon Muffins

This recipe may sound kind of weird, but believe me, these are amazing! I got inspiration from Deliciously Ella’s (from http://deliciouslyella.com/) new triple layer chocolate cake with fresh raspberries and thick frosting. I started with a not-as -healthy recipe for muffins and basically changed every ingredient! But these are just amazing! Not only does it have whole wheat flour and fruit from the apple and raisins but it actually has a sweet potato and is almost sugar free except for a spoonful of honey!
makes one dozen

INGREDIENTS:                                                                                                                        

1 1/2 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1 egg
1 small sweet potato
1/3 of a banana, mashed
1 or 2 tbsp honey
1/3 cup water

Peel and chop the potato and boil until very tender. Drain. Meanwhile, in a large bowl, combine the flour, baking soda, and salt. In a small bowl, mash the potato with a for and beat in egg, banana, and honey. Add to the dry mixture and slowly add water till it reaches the proper consistency.  Scoop into a greased muffin tin and bake for about 20 minutes or until a toothpick poked in the center comes out clean.
