Its Fall…at least for me it is. A couple days ago was a perfectly chilly day and so what would i make for breakfast? A big bowl of oatmeal of course! (Cant say the same about yesterday … 70 degrees out!)
Isn’t that beautiful?
Still not convinced? Creamy oats with sauteed banana and just the right amount of peanut butter and a hint of cinnamon.
I topped mine with chopped almonds, but a spoonful of peanut butter is great!
INGREDIENTS:
1 banana (I used frozen. Anything will work!)
1/4 tsp. coconut oil
1 tsp. brown sugar
1/2 cup oats
1 cup water
1 REALLY heaping tsp. peanut butter
1/4 tsp. cinnamon
a pinch of nutmeg
Break the banana into chunks and put in a small sauce pan. Add the coconut oil and brown sugar and saute while chopping up the banana with whatever your using to stir. Make sure your stirring constantly or it will burn on the sides of the pan. When its done it should be a little bit caramelized and will look like this:
Add the oats, water, peanut butter, and spices. Cook until its to your desired thickness or looks like this:
Dump it it in a bowl and enjoy!
Just so you know, when I say heaping, I mean like this:
Enjoy your oatmeal!
I forgot to say, this makes one really big bowl of oatmeal
We can’t wait to try the oatmeal! Barbara & Tom

I also heard of using other nut butters, but i haven’t tried it myself
